Vegetables 40 years ago were different than the vegetables we buy today. They seemed to taste better. One suspects that they were better for us, too. Why?
The answer is: dirt.
Our soil is constantly being depleted of critical compounds, by-products of a natural degradation process of vegetation that exists no more, and this results in plant food that is a pale imitation, a replica of what it once was.
True, a tomato is still a tomato and a carrot is still a carrot, but the nutritional potency of that tomato or carrot is anemic compared to what it was 100-years ago, or even 40 years ago.
And it will only get worse: not only are the vegetables nutritionally compromised, they are, in fact, toxic. The petrochemicals used to prevent infestation and provide a longer shelf life are detrimental to the human species.
Even our water is weakened and inadequate. Most doctors, scientists and health experts are totally unaware of the fact that water today has lost 50% of its hydration power. Tons of petroleum chemicals are dumped each and every day into the soil by commercial agricultural interests in a desperate attempt to be more cost-effective.
The very chemicals that have been designed to improve and extend vegetation life actually further contaminate, acidify and weaken the soil.
Sadly, given the extensive list of environmental woes we face, the deterioration of our soil does not receive much attention. Given the lack of attention, few people are aware that soil acidification is having a devastating effect on the plant pool of vegetables and in turn this is having devastating consequences on animals and humans.
